
Today we’re cooking a very unusual, tasty and very healthy cake.
Its main ingredients are carrots and sesame seeds.
Everyone knows about the healing properties of carrots.
Right?
But what about sesame? It is worth telling you a bit more.
Indeed it is very healthy!
Sesame is saturated with calcium.
One handful of sesame seeds contains even more calcium than a glass of milk.
Sesame is rich in magnesium, phosphorus, zinc, vitamin B1, protein and fiber.
Sesame contains potassium, which lowers blood pressure and helps to suppress stress, it contains phytosterols to combat bad cholesterol and cancer. It perfectly supports the work of the liver, teeth and respiratory tract.
Carrots perfectly match the sesame flavor! This cake is a sweet with a low glycemic index, since it does not contain sugar and even dates.

We will need: (1 average cake)
For the base
1/2 (1 cup – 250 ml.) cup of almonds
1/4 cup of light sesame
1/2 cup of oats
1/4 cup of coconut flakes
10-12 pieces of dried apricots
2 tbsp. of coconut oil
2-3 tbsp. of orange juice
For the white cream
1/2 cup of cashew
1/2 cup of almond or regular milk
2 tbsp. tahini (sesame paste)
4 tbsp. of agave or honey syrup
Cinnamon to taste (optional)
For the carrot cream
1/2 cup of cashew
1 raw peeled carrot
2 tbsp. of coconut oil
2/3 cup of orange juice
2-3 tbsp. of honey or agave syrup
Grind the oats, nuts, coconut flakes and sesame.
Add apricots.
Add the oil and juice.
You should get a sticky mass for the base.
Distribute it on the mold.
Soak cashews for 3-4 hours minimum, then drain the water. If your blender is powerful enough, then skip this step, since your nuts will be ground well even without soaking.
Blend everything for the white cream.
Blend everything for the carrot cream.
Pour both creams in the mold. I made a pattern, but the layers can be distributed one by one. White is first, for example, and then orange.
Done!
Put it in the freezer until it freezes up.
