
I love to make waffles.
It’s easy, it’s fast and the result is always a hit! My kids love to eat them with some jam, agave or just as is. Super delicious!
My waffles are best when warm but you can still enjoy their taste reheating them after a while. They are made of just a few ingredients, they are super healthy and easy to make.
They are so versatile so you can even freeze them!
No eggs, no dairy, no flour, no gluten, no oil, “no nothing” that you don’t want to have.
These waffles can serve as a great breakfast or just a side to your chicken. Just simply reduce the amount of sugar in my recipe, add more salt, some spices to your taste, and even some fresh herbs.

We will need:
3/4 cup (1 cup- 250 ml.) of yellow corn flour
1 cup of gluten-free oats
1/4 cup of brown sugar (you can use any sugar you want)
1/4 table spoon of baking powder
3/4 cup of any plant-based milk (can be substituted by a regular milk)
1/4 cup of lemon juice
1/4 cup of apple sauce
Grind your oats. Add corn and coconut flour. Mix with sugar and baking powder.
Mix milk, apple puree and the juice to get a “kefir-like” liquid.
Combine together the wet and dry ingredients.
Bake your waffles in a waffle maker.
Ready to serve!
