You’ll be surprised to find out that I eat much more ice cream during the cold time of the year than during summer heat. For whatever reason I feel that I need this comforting sweet and fatty taste when the sun is not so bright and the mood is not too bright either.
Today I want to show you a delicious recipe that can bring your “cold” days to a new level.
And yes, this is an ice cream for adults because today we are going to use some bourbon.
First - to make it tastier, second to get rid of extra ice crystals, so our ice cream can be very smooth even without a special machine.
Get a good coffee, add other magical ingredients from my list and here we go: another cold day is suddenly a good memory.
You can add some extra chocolate chunks or marshmallows or just serve it as it is.
It’s super delicious and deserves your attention.
Ready? Let’s go cooking!
We will need:
2/3 cup (1 cup - 250 ml.) of gluten-free oats (do not use flour)
2/3 cup of cashews
6 large dates
1. 1/4 cup of any plant based or any other milk
1 tea spoon of instant coffee
1 tea spoon of good bourbon
Any type of chocolate (optional)
Soak you cashews for 2-3 hours if your blender is not strong enough to process hard nuts.
Drain cashews then add dates, milk and blend well.
Add coffee at the end. Then add bourbon. Yessss! Smells exotic but it’s worth it!
Time to add some chocolate
Freeze. I like when it’s half way through - 3 hours or so. In this case you will have some hard parts and some - very smooth.
If your ice cream is too hard just let it sit in a warm place for 5 min. That’s it!
Coffee, bourbon, ice cream - you got the best of them all in one delicious dish!
