
I’m not a cranberry fan, so I rarely cook with it.
But the other day when I went to a store, I saw fresh cranberries on the counter and succumbed to temptation: I bought some.
I decided to make a culinary experiment called cranberry cake or, as Americans say, bread.
Gentle, moderately sweet, based on applesauce – liked by all the members of my family. My children and husband were literally fighting for every bit of it! I am sure that you will appreciate this simple dish.
Ready? Set? Let’s go cooking!
We will need:
1 cup (250 ml) flour
1/2 cup ground oats
1/2 Tbsp. baking soda (I use 1 1/2 Tbsp. baking powder)
1/4 cup almond or any other milk
1 Tbsp. vinegar
3 Tbsp. vegetable oil + a bit for the pan
1/2 cup of white brown sugar
1/2 cup applesauce
1/2 cup fresh cranberries
Preheat the oven to 165C / 325F.
Grind the oats in the blender. Combine milk, vinegar, applesauce, sugar, and oil.
Mix oat flour and white flour. Combine dry ingredients with moist ones. Add cranberries.
Oil the baking pan, and pour in the dough. Put it in the oven for 45 minutes.
Done!
Fragrant and very tasty.
