Watermelon is my favorite summer snack.
It’s light, it’s refreshing, it’s cheap and you can literally buy it everywhere.
My best summer childhood recollections are all about big and juicy watermelons.
I grew up in a area where 25 years ago you were able to get the sweetest watermelons twice as big as your head.

Today we are making an amazing summer desert that is super easy to prepare, it is healthy and requires just a few ingredients: a watermelon sorbet!
You can certainly let your kids help you do it to make it more fun for the whole family. They are going to love it! Fun to make, fun to eat.

We will need:
3 cups ( 1 cup – 250 ml.) of cubed and frozen watermelon
2/3 cup of coconut milk (I use low fat)
2 tablespoons of agave (if your watermelon is no sweet enough)
1/2 teaspoon of guar gum (optional)
2 tablespoons of lime juice
Fresh mint or basil (optional)
