Pine pineapple ice cream (sugar-free, vegan)

This is my new favorite ice cream! I’m not going to be shy to say that this ice cream is simply amazing!
Why?
Because it has it all:
Texture
Ingredients
Taste
Look.
It’s super easy to make and consists of just a few ingredients.
Amazing balance of flavor will not disappoint you. I promise!
I know it’s still cold outside and does not feel like spring, but let’s at least pretend it is here and maybe it will show up!
Ready? Let’s go cooking!

We will need:

1/2 cup of pine nuts (1 cup – 250 ml.)

5 large and soft dates

1 cup of frozen pineapple (you can use fresh if you want)

1 cup of almond, soy or any other plant-base milk

1/2 tea spoon of guar gum

Defrost your pineapple and remove all the left over liquid.
Soak pine nuts for an hour if you think your blender is not strong enough for this job.
Dry after that and blend with dates, pineapple, milk and guar gum.
Place ice cream in a container and put in a freezer for at least 4 hours. Ready!
Be careful not to eat it all at once! It’s super delicious! Enjoy!
