I feel strongly disposed to apples. What about you? Today we have on our table a stunning apple pie with a dough base, which is difficult to name it so.
Thin, delicate, melt in the mouth! A wonderful alternative to the usual heavy pie.
It has no butter, but there is a healthy coconut, which gives the pie an incredible taste and smell.
Who could imagine that the coconut blends so well with the apple flavor?!
Don’t worry I tested it out already for you. This recipe is my pride, all the members of my family appreciated it and were lost in admiration of this apple creation.
This pie will suit everyone. You can make it both open or closed – the choice depends on what kind of filling you prefer: puree or slices.
Prepare this simple and very low budget pie! No doubt it’s worth it!
Ready? Set? Let’s go cooking!
We will need: (1 medium pie or 2 small pies)
For the dough
1 and 2/3 cups of all-purpose flour (1 cup – 250 ml.)
2 tbsp. of brown sugar or plain
1/2 cup of coconut oil
1/4 cup of cold water
Cinnamon to taste
4 large green or red apples
5 tbsp. of brown sugar or plain
1 tbsp. of tapioca starch or any other
Cinnamon to taste
Preheat the oven to 165C / 325F.
Add the sugar, flour, cinnamon in the blender and blend it.
Measure out the oil.
It’s better to have it chilled. Add to the blender, then add cold water.
Preparing the dough.
Wrap it with a food film and put it in the refrigerator for 30 minutes; it will make it easier to work with.
Peel and core the apples.
Cut it into medium sized cubes, add the sugar, cinnamon, and starch of your choice. The latter one can be replaced by a similar portion of all-purpose flour. The filling is ready.
Take the dough out of the refrigerator.
Dust the board with flour and roll out the disks to the size of your pan. This amount of ingredients is suitable for one closed standard shape pie (23 cm in diameter) or two small ones, as shown in the photo. If you cook two pies, then you need to roll out 4 discs. Do not be afraid to sprinkle to the dough with flour: this will help roll it out. If you cook one pie, roll 2 discs. I will explain the way to shape the pie, because it is the same for any shape and diameter.
Put one disk down. Do not lubricate the mold, since our dough contains enough oil. The edges need to be leveled, but they should not be too short.
Fill with the apples. Cover with another dough disc, bending it under the lower layer of the edge.
There are many methods to make the final edges beautiful and neat. Since our dough is not quite ordinary, I use the simplest method that is shown in the photo. Final view in front of you. By the way, such a pie does not have to be baked at once, it can be put in refrigerator or even a freezer, where it nicely can wait for some time. Put the pie in the oven. It is ready when the edges are browned. The time depends on the size of the pie and the baking shape, but it should not exceed 1 hour. I made two pies, one was left open, the other one closed.
Cook note: for those who prefer the filling to be in cubes, I advise leaving the pie open. The ones who prefer a delicate filling that melts in your mouth, I recommend covering the pie.
It’s amazing, but the same recipe with such a small difference makes the taste of these pies completely different.
