Mint salad with brussel sprouts and peanuts (vegan)

Nothing beats a great, healthy salad for me.
It’s easy to make and it’s so vibrant and inspirational that you want to keep making it again and again.
My salads are typically super easy to make and with simple ingredients.
I love a straight forward combination of my ingredients and I appreciate every bit of what comes out as a result. And every tome I make a new recipe I want to elevate it to the best combination of the simple basics into a unique and refreshing taste.
So today we are making an amazing and of course (mother-of-5-approved) light, healthy and easy salad that will blow your mind away.
It’s literally addictive. So hard to stop eating it.
Mint is the star of this dish paired with peanuts that are rich and tasty. OMG, add some crunch of brussel sprouts to it and you will have an amazing salad. No doubt you will enjoy it.

Let’s make it happen!

We will need:

10 brussel sprouts

1 bunch of fresh mint

3 table spoons of peanuts

2 table spoons of lemon juice

1 table spoon of agave or honey

Salt and black pepper

Chop your sprouts and mint. Mix together.
Chop the peanuts.
Mix together agave, lemon juice.
Combine all ingredients.
Add salt, pepper. Ready to serve!
Enjoy!

    Лида, благодарю за салат! Вместо меда использовала кленовый сироп, добавила каплю соевого соуса. Брюссельская капуста “расцвела” на фоне мяты. Сочетание восхитительное!
