
I rarely bake cookies.
Why? I simply don’t have the time – 5 little kids running around just don’t make life easy.
That’s for sure. But when I do, it always should be some easy and healthy recipe like the one I am showing you today. Very simple ingredients, that will make baking those cookies fun.
These cookies can be a great sweet addition to your kid’s lunch or just an instant gratification for your sweet tooth.
You can cover these cookies with chocolate or whatever you want.
I choose chocolate, but you can dust it with some powder sugar or you can spread some jam in between cookies and call it a day.
These lovely cookies are gluten-free, only lightly sweetened and easy to store. Hope you will enjoy my cookies like my whole big family did.

We will need:
1.1/2 cup of gluten-free oats
1/2 cup of almond flour
3 table spoon of brown rice flour
4 table spoons of brown or cane sugar (you can substitute with 3 dates)
4,5 table spoons of tahini or any nut or seed butter
2-3 table spoons of water
A pinch of baking powder
Chocolate of your choice
Warm up your oven to 250F/120C.
Grind your oats till it has a look and texture of flour. You can do the same with rice and almond but I recommend to go with the store-boght flours, because they are dryer and will work better for this recipe.
Mix together butter, sugar.
Mix with all types of flour. Add water.
Form cookies of the same size and thickness. Place them on parchment paper and bake for 10-15 minutes, until they are ready. Don’t burn them or overbake.
Cool down. Melt and make any chocolate you want and cover your cookies when they are cold.
Chill the cookies and serve.
They are simply prefect! Enjoy!
