That is to say, welcome it with bread and salt. (‘Bread and salt’ is an old Slavic greeting ceremony.)
Although you can do it without salt too – it’s up to you.
Today we’re making an incredibly delicious seed bread.
Once you have tasted this bread, you will never want to eat the regular one again.
It is not just healthier, but also more beautiful, suitable for any dish and it also miraculously diversifies your diet.
The bread is going to be a bit damp (but it can be dried by just adding an extra 15 minutes to the baking time), very nutritious (even one piece of it can satiate you) and fragrant.
I have no doubt that you will be delighted! I like to serve this bread as a toast with avocado and hummus. The choice is yours!
Ready? Set? Let’s go cooking!
We will need: (1 large bread)
1.3 / 4 cups water (1 cup – 250 ml.)
1/4 cup of chia seeds
1/2 cup of sunflower seeds
1/2 cup of pumpkin seeds
3 tbsp. of sesame seeds
1/2 cup of buckwheat groats
1 cup of gluten-free oats (or the regular one, if gluten presence is not important to you)
1/2 cup of almonds
3 tbsp. of flaxseed meal meal
3-4 tbsp. of coconut or olive oil (can be substituted with any vegetable one)
2-3 tbsp. of agave syrup (can be replaced by 1.5 tablespoons of sugar)
Salt to taste
Any spices at your discretion
Grind the almonds. I use ground almonds – it’s more convenient for me. Preheat the oven to 165C / 325F.
Line the baking sheet with baking paper so you will not burn anything.
Put the buckwheat, nuts, pumpkin and sunflower seeds on it. Add a few spoons of oats. I believe that this way, the bread gets a particularly piquant aroma, but you can skip this step if you want. Bake for 10 minutes.
Take out the result and mix with the other ingredients. Add salt, spices. I love this bread with rosemary, but you are free to experiment with other herbs and seasonings. Now the composition needs to sit for about 1 hour so that the ingredients can absorb the water and swell a little.
Line the baking mold with the same paper on which you baked the seeds. Saving is the key to the financial success of a large family. Just kidding. If you bake in a silicone mold, you will not need paper at all.
Put it in the oven for 1 hour and 15 minutes. Make sure the bread does not burn. It must dry and get a very appetizing crusted look.
Take it out and cool it. Done!
Cut and serve! You can make toasts from such bread easily by baking its slices in a toaster or the oven.
