Today we’re making delicious hazelnut sweets that you will want to eat nonstop.
Be careful! There is grave danger that you won’t stop at one or two candies. In a word, they do not contain sugar, taste like Nutella, melt in your mouth, and scream: “Eat me!”
These candies can be covered with chocolate, but it’s not necessary, because they are sweet enough without an additional sweetener.
There is no flour or oats in these sweets. The hazelnut replaces everything! My candies can be stored in the refrigerator, but are most delicious, in my opinion, when they are eaten straight from the freezer.
Ready? Let’s go cooking!
We will need: (20 medium chocolates)
1.5 cups (350 ml) hazelnuts
3 tbsp. sugar-free cocoa powder
20 large, soft dates
3 tbsp. of almond or regular milk (if necessary, to mix the dough)
To begin, roast the hazelnuts. This is how you achieve that incredible taste of Nutella. Distribute the nuts on baking paper and put them in the oven for 10 minutes at 165C / 325F. Raw foodists can skip this step and make the candies from unroasted hazelnuts.
Take them out, let them cool, and remove the husks (as much as you can). The easiest way to do this is to rub the nuts against each other with your hands. Discard the husks, and add the nuts to the blender.
Blend and add cocoa powder. I use dark cocoa powder to achieve a more spectacular chocolate shade, but you can use any available type.
Add the dates and milk. Blend again.
This is the dough.
Roll balls from the dough and put them in the freezer. That’s all!
Before serving, sprinkle some with cocoa powder, dip some in chocolate, and roll the others in seeds.
P.S. Remember these sweets are more delicious when eaten right from the freezer!
