Today we’re making wonderful apricot bars with coconut.
They consist of just a few ingredients, and at the end are covered with my homemade chocolate.
The recipe does not contain gluten or sugar.
Apricots give an incredibly gentle and pleasant aroma, they are moderately sweet, which makes these bars more delicate than the ones made from dates.
The coconut flakes create an excellent soft textured filling and surprisingly it is perfectly combined with apricots.
I use reduced fat coconut flakes, which frees this recipe of excess calories, but the regular ones will be fine too.

We will need: (9 pieces)
1.1 / 3 cups (1 cup – 250 ml.) of dried apricots
1.5 cups of coconut flakes (sugar-free)
For chocolate (or can be substituted for any melted chocolate)
1/4 cup of coconut oil
3 tbsp. of agave syrup
3 tbsp. of cocoa powder (sugar-free)
Moisten the apricots in warm water. So they will soften faster. Drain the water.
As I said, I use reduced fat coconut flakes. It is not so fragrant, and slightly drier than usual, but the taste of it does not differ so much.
Put it in the blender and pulse.
Add the apricots.
You will get a soft base – the filling.
Cut into portions, then put in the freezer for 2-3 hours or until they are completely solidified.
Make chocolate. In this recipe, I indicate the amount of ingredients for double coating the chocolate bars. If it is enough for you to cover only once then halve the recipe. Take out the bars and cover with chocolate.
Be prepared to do everything quickly.
Take it back to the freezer for 10 minutes.
Done! Take it out and enjoy it! Incredibly simple and very tasty!
