There is something special and elegant about them.
So just imagine this elegance but with the all-important gluten-free, sugar free tag!?
Yes, it is actually quite possible.
And today we are going to create an amazing, very healthy dessert that will guaranteed blow your mind.
It has everything you need and it tastes delicious!
Hope you will enjoy it as we have.
Ready? Let’s go cooking!
We will need:
For the base
1.1/4 cup (1 cup – 250 ml.) of gluten-free oats
1/2 cup of almond flour
1/4 cup of rice flour
2 large and soft dates
4 table spoons of coconut oil
1,5 table spoons of lemon juice
1 table spoon of water
For the filling
340-350 g. blueberries (I use frozen)
1/4 cup of agave syrup
4 table spoons of tapioca flour
For the crumble
1/2 cup of almonds
1/2 cup of gluten-free oats
2 table spoons of coconut oil
2 large dates
Warm up your oven to 150C/300F.
Grind your oats to create the flour we need. Mix it with the almond flour. It’s better to use a ready flour because it is dryer and better for the base. Mix two types of flour and add dates.
Add oil, juice, water. The dough will be slightly sticky.
Form our base by kneeling.
Mix together berries, syrup, tapioca. If you use fresh berries, cut down on tapioca. It will be less needed.
Pour everything over the base.
Make the crumble.
Pour it over the berry layer.
Put in the oven for 20 minutes.
Then take it out, cover with the foil and leave it for another 5 minutes. Ready!
Cool it, serve it, enjoy it!
