
Cream soups are the simplest and tastiest way to satisfy hunger.
A lot of people love pumpkin soups, they cook them in their own ways, with different ingredients.
Everyone, so to speak, has their own secret ingredient.
For my soup, I add a lot of garlic and cauliflower, but the most unusual addition is dry mint.

Let’s go cooking!
We will need:
2 1/2 cups (1 cup-250 ml) of water or regular broth
1 cup of pumpkin
1 cup cauliflower
4 cloves of garlic
1/4 pieces of white onion
2 tbsp. of rice or any delicate vinegar
4-5 tablespoons of coconut or almond milk (can be replaced by usual)
1/2 tbsp. of curry
1 tsp. of dried mint
1/2 tsp. of dry ginger
Salt and black pepper to taste
Neutral vegetable oil for frying (I use canola oil)
Cut the garlic. I will say right away that in America, where I live, garlic is very weak, and not so fragrant, so I have to use twice as much as I would recommend for those who cook with Russian garlic, which if eaten, will force you to limit contact with other people for a couple of days, hehe.
Pour the oil into a saucepan, where you will be cooking the soup, and add garlic. Add the onion.
Fry a little and pour in the broth.
Cut the pumpkin and cabbage and add them to the soup.
Add the spices.
Do not forget about the most important ingredient.
Cook until the vegetables are lightly cooked. The pumpkin and cabbage should not be cooked completely.
Drain part of the broth. Put all the vegetables in the blender, add the milk and combine everything. The liquid is always better added gradually since the thickness is very difficult to reconstruct while adding additional broth is something you can always do. I try not to add a lot of milk because I think that it reduces the taste of the vegetables. If you are not bothered by this, and you want to make the soup very creamy, then I recommend draining all liquid before blending and replacing it with milk. Add the vinegar.
