I can’t believe that it’s the end of June. How time flies … You all know that I have 5 children, which means summertime for me is very tense: no school, everyone at home, activity is high and the child’s sense of hunger becomes a really common phenomenon.
A healthy ice cream is an excellent option for a summer snack. It can be eaten for breakfast or lunch, even as an evening dessert.
Today we’re cooking an incredibly tasty and very popular ice cream in America, called “Red Velvet”. It has a very rich taste and color. It is something between sweet cherry, chocolate and beet.
And now guess what I use for my healthy recipe? Exactly! Cherries, cocoa powder and beets. At the core of the recipe is tofu, and for sweetness, I add dates that can be replaced with syrup or white sugar.
To give a special piquancy, I add slices of chocolate. It’s very tasty, unusual and healthy.
Ready? Set? Let’s go cooking!
We will need: (3 servings)
200 g of silken tofu
1/3 cup of cooked beetroot
5-6 large, soft dates (can be replaced by 3 tablespoons of sugar)
2 tbsp. of sugar-free cocoa powder
6-7 sweet cherries (I use frozen, can be replaced with fresh cherries)
1 teaspoon vanilla without alcohol
2 tbsp. of chocolate of your choice (optional)
Let’s start with the tofu. We need the softest version of it. In America, this product is called silken tofu. It does not crumble, has a very delicate texture and resembles pudding. Do not write to me that you failed if you start cooking this with a dense tofu. The tofu should be soft! End of story.
Mix the tofu, dates, cocoa powder and beets.

Add the cherry and vanilla. Mix again. The mixture should become a homogeneous mixture. Slice the chocolate and add it to the ice cream.
Done! Put it in the freezer until it sets.
