Vegan baked cabbage with mushrooms and “cheese” (gluten-free)

Well, it’s getting colder outside so it’s time to cook something comfortable and soothing.
Baked cabbage with “cheese” is the way to go.
Very soft texture of cabbage coupled with vegan “cheese” that I make with cashew nuts and nutritional yeast.
Very tasty and the “cheese” will confuse your taste buds (in good way)!
This dish is great for lunch or dinner, may work with some protein added in the mix or just by itself.
Try it!
Easy to cook, made with just a few ingredients and very tasty! Ready? Let’s cook!

We will need:

2 cups (1 cup-250 ml.) of white cabadge

3-4 mushrooms

1/2 cup cashews (soaked for 2 hours)

1/2 cup of water

1,5-2 table spoon of nutritional yeast

Salt and pepper (to taste)

Green onions for decoration

Canola oil

Warm up your oven to 165C/325F.
Chop your cabbage and the mushrooms.
Sauté it with some oil for about 5 minutes. Now let’s mix everything for the “cheese”: nuts, yeast, water, salt and pepper.
Put the oil into the form and then put the cabbage in it as well. Then cover with the the “cheese”.
Bake for 10 min or till it’s a bit brown and smells delicious!
