I am a big fan of arugula.
I think it has it all: it’s crunchy, slightly bitter, full of vitamins, antioxidants and pairs great with lots of healthy food ingredients.
Today I would like to share with you my new, very simple but delicious recipe – my arugula salad with blueberries and seeds.
Sounds weird, but this combination is super nutritious! Slightly sweet, very filling, looks great and very yummy.
I use orange dressing that is also very easy to make and helps elevate the taste of the salad to the next level.

We will need:
1 portion of wild arugula
1/4 medium-size carrot
1 table spoon of almonds
1 table spoon of hemp seeds
For the dressing
2 table spoons of orange juice
1 table spoon of olive oil
1/2 tea spoon of agave syrup or honey
Salt and black paper to taste
Mix everything for the salad base.
In the other bowl mix everything for the dressing. Combine together. Ready to serve! Enjoy!
