This is my new recipe: I tried it only today, and I had to share it with you! This is a small portion, only 4 tartlets, but I like how simple it is to sit down and eat them.
We will need: (4 pieces)
For the dough:
200 g (7-8 oz.) all-purpose flour
2 Tbsp. white sugar
3 Tbsp. vegan butter like Earth Balance (or regular margarine)
a pinch of cinnamon
2 tsp. orange juice
1 large peach
1 Tbsp. honey
2 Tbsp. all-purpose flour
1 1/2 Tbsp. vegan butter like Earth Balance (or regular butter)
2 Tbsp. oats
2 Tbsp. pecans
Mix flour, sugar, and cinnamon. Add butter (margarine) and mix everything. If the dough is too dry, add orange juice. Knead the dough with your hands and make small flat rounds. Grease the cupcake mold with vegetable oil and bake the crust for the tartlets 10-15 minutes at 165C / 325F. Cut the peach with the peel, add honey, and mix. Separately mix the oats, flour, sugar, nuts, and cloves. Nuts should be cut into small pieces, but not crumbs. Add the oil and mix.
Take the tartlets from the oven, cool them, put a spoon of peaches with honey, and top with some crumbs. Put it back in the oven at 165C / 325F for 30-35 minutes. Take it out when the crumbs are slightly roasted, and the peach “boils.”
Cool and serve!
