I love orange juice, so I often experiment with adding it to dishes.
Pancakes, pies .., and today, we are preparing a bread.
It melts in your mouth and contains just a little bit of all-purpose flour. It is a very soft, juicy, delicious fruitcake with light raspberry sourness and incredible citrus aroma.
It’s easy to make, and, although it contains just a bit of sugar, it can easily become part of your healthy menu.

We will need: (1 medium cake)
1/2 cup of oats (1 cup is 250 ml.)
1/2 cup of whole wheat flour
1/2 cup of all-purpose flour
1 / 2-1 tsp. of dry or fresh orange peel
3 Tbsp. of raspberries
1/2 tsp. of baking soda
1 cup of orange juice
1/3 cup of sugar (1/2 if you like sweet cupcakes)
3 Tbsp. of vegetable oil
1/2 tsp. of vanilla extract (optional)
Preheat the oven to 165C / 325F.
Grind the oats to the consistency of flour.
Mix with the whole grain and all-purpose flour and soda.
Combine the juice, sugar, oil, and vanilla. Add the orange peels to the dry mix. Combine the wet and dry ingredients. The dough should not be too dry. If it’s hard to stir, add a little more juice.
Add raspberries and gently stir. Try not to break all the berries, otherwise, the cake will lose its appetizing color and appearance.
Oil the pan with coconut or vegetable oil. Bake for 40-45 minutes.
The bread is done when a toothpick inserted in the middle comes out dry and the cake has risen and became dense and ruddy.
