Wow! It’s hard to believe, but I have not tried anything tastier and more delicious than these muffins. The melon taste does not dominate, and the strawberry adds color and an original note.
Ready? Set? Let’s go cooking!
We will need: (for 5 large vegan muffins)
100 g of ground oats
120 g of all-purpose flour (preferably white)
1/2 tbsp. of baking soda (I use baking powder)
2.5 tbsp. of brown sugar
2 slices of melon without skin (or 120ml melon puree)
3 tbsp. of fresh strawberries
Vegetable oil for lubricating molds
Mix the flour, oats, baking soda and sugar in a separate container. Cut the melon into pieces and crush it in a blender. It must be liquid. The strawberries are cut finely and added to the flour together with the melon puree. Combine well. The muffins will rise, so fill out the molds half-way. Do not forget to oil the muffin pan with vegetable oil. Bake for 20 minutes at 165C / 325F
