Delicate, tomato, raw, vegan.

Tomatoes are an amazingly useful vegetable. They contain a large amount of lycopene, which helps in the fight against cancer.
Tomatoes also contain vitamins E, A, B6, K, biotin, molybdenum, and phosphorus. They are rich in vitamin C, which is a powerful antioxidant and the basis for the formation of collagen, the element responsible for the health of our skin.

Ready? Set? Let’s go cooking!
We will need:
2/3 cup (160 ml) vegetable broth or water
3 large tomatoes
1 clove of garlic
1/4 sweet red pepper
1/2 stick celery
A sprig of fresh mint
1 tbsp. of rice vinegar or any other light vinegar
Salt and black pepper to taste
Olive or avocado oil for decoration (optional)
If you use a powerful blender like Vitamix, then you don’t have to peel the tomatoes. If you use a regular blender, then the tomatoes must be peeled and the hard center should be removed.
Slice the tomatoes and put them in the blender.
Peel the cucumber.
Deseed the red pepper.
Put the cucumber, garlic, mint, pepper, and celery in the blender, and add the vinegar and broth.
Blend to get a delicate tomato soup. Let it stand in the refrigerator for 3 hours and serve. You can decorate the soup with olive oil or a sprig of fresh mint.
Put that light, delicious, and very healthy gazpacho on the table! Now you can survive the heat!
