Well! It’s been a long time since we last made cookies. No problem!
Today, we will make absolutely amazing cookies using no flour.
They consist of only four (!) ingredients, are prepared in 15 minutes, and are easy to store. Crispy, moderately sweet, nice looking – everyone will like them.
In my recipe, I use reduced fat coconut flakes and roasted almonds, but unroasted almonds and regular coconut flakes will fit as well.
We like excellent results with minimum effort!
Personal advice: put these cookies in the freezer for 15 minutes.
They will taste much better!
Ready? Set? Let’s go cooking!
We will need: (12-13 cookies)
1 cup (250 ml) of coconut flakes
1/2 cup of almonds
3-4 Tbsp. of agave syrup
1 Tbsp. of coconut oil
Melted chocolate to your taste (optional)
Preheat the oven to 150C / 300F.
Grind the nuts. Almond flour bought in the store is not suitable, because it is too dry, and we need a slightly moist almond mass. Mix with coconut and add agave. Add oil. The dough should be crumbly, but sticky.
Split into portions. For this, I use an ice cream scoop. We line the baking sheet with baking paper and distribute the cookies. Bake for 10 minutes or until the cookies are lightly browned.
After getting the cookies out of the oven, DO NOT touch them. Allow them to cool and set. Until they are set and cooled, they can start to crumble. Melt the chocolate or make your own.
When the cookies have cooled, paint the lower part of them, if you like, with chocolate.
Ready to eat, and they look great!
