Many of us love buckwheat and of course, have tried it in different forms: porridge, garnish, soup and so on.
But have you tried buckwheat parfait? I don’t think so.
Today we will make this surprisingly healthy, tasty and very beautiful dessert. It can also easily become your breakfast. Buckwheat is an excellent source of protein, it lowers the blood pressure, contains vitamin B6 and folic acid, which helps to reduce harmful cholesterol in the blood. It is rich in vitamin E and magnesium, which is responsible for the health of our teeth and bones. It is rich in antioxidants and helps fight against aging, and a set of minerals increases hemoglobin and resists colds.
My healthy and nutritious, light, yet moderately sweet parfait can be supplemented with various fruits to suit your taste. It seemed to me that berries fit perfectly here, but the choice is yours. Ready? Set?
Let’s go cooking!
We will need: (1 large portion)
1/2 cup (250 ml – cup) of buckwheat groats
1/2 very ripe banana
2-2.5 tbsp. of flaxseed meal (or chia seeds)
4 tbsp. of agave syrup or honey
1/3 cup of coconut or any other milk (you can use oat milk)
2 tbsp. of sugar-free cocoa powder
Berries or any other fruit for decoration
Soak buckwheat in water for a day.
Do not worry, the water after soaking the buckwheat will be a little slimy – it’s ok.
Rinse the buckwheat.
Put it into the blender, add the flaxseed, syrup, banana and blend everything. Add the milk gradually so that the parfait is not too runny at the end. You should get a homogeneous mixture.
Set aside half of the mix, leaving the other half of the composition in the blender and add 2 tbsp. of cocoa powder there.
Pulse to get the chocolate cream.
Put some berries to the bottom of a tall glass.
Cover the berries with a layer of the white mixture. Now add a chocolate layer, add more berries and cover them with another layer of white mixture again.
Finish by adding another layer of chocolate and decorating with a sprinkling of berries.
Cool it in the refrigerator until the desired temperature is reached, if necessary. Tasty and healthy!
